Nuts are clearly one of the most valuable sources of nutrients in the autumn months: regular consumption of nuts can not only maintain healthy blood vessels, but can also help prevent cardiovascular disease and some cancers. Although most of us associate nuts with fragrant, spicy autumn-winter cakes, today’s recipe proves that they can also be used as part of a main meal.

Ingredients

1 pack of Eisberg Farmer Mix
10 dkg nuts
20 dkg feta cheese
1 bunch of fresh thyme
2 tablespoons of mayonnaise
2 tablespoons of lemon juice
2 tablespoons of walnut oil (e.g. from health food shops)
2 tablespoons of seed mustard

Directions

Toast the walnuts in a medium-sized dry pan until fragrant. Cut the feta cheese into bite-sized cubes and finely chop the thyme. That’s all the prep work done! Next, prepare the salad dressing. In a medium-sized mixing bowl, combine the mayonnaise, lemon juice, walnut oil, and mustard. Whisk thoroughly with a hand whisk until well blended. Now you have two options: Toss the salad thoroughly with the dressing right away. Drizzle the dressing over the salad just before serving, as desired. Pile the flavorful salad onto a plate, sprinkle with the toasted walnuts and feta cubes, and finish with the chopped thyme.
